Bleeding Heart Bakery & Cafe Revamps into West Town Bakery & Diner
Bleeding Heart Bakery & Café in West Town (1916 W Chicago Ave) will revamp into West Town Bakery & Diner and will no longer be associated with the Bleeding Heart brand.
Bleeding Heart Bakery & Café in West Town will close for cosmetic remodeling at 9pm on Sunday, July 22 and is aiming to reopen to the public as West Town Bakery & Diner at 7am on Saturday, July 28.
West Town Bakery & Diner is still owned and managed by Greg Mohr and Scott Weiner who also own and manage The Fifty/50, Roots Handmade Pizza, and the newly-opened Homestead — which is located upstairs of West Town Bakery & Diner.
West Town Bakery & Diner will open as a 3-Star Certified Green Restaurant via the Green Restaurant Association. Only seven other restaurants in Chicago are 3-Star Certified Green Restaurants (City Provisions, Frontera Grill, Topolobampo, Hamburger Mary’s, Province, Simone’s, Xoco). Only two Chicago restaurants have a higher (4-Star) Certified Green Restaurant rating (both Uncommon Ground locations) than West Town Bakery & Diner.
“All facets of our business in West Town have been really great from brunch to wholesale to baked goods to specialty cakes, but we felt it was time to change things up and impart more of our unique culture that fuels our other successful restaurants,” Mohr said. “Scott, myself, and our talented culinary and management teams have been hard at work implementing positive changes to West Town, and we can’t wait to show everyone the bright future of West Town Bakery & Diner.”
“We’re beyond excited to open West Town Bakery & Diner as a 3-Star Certified Green Restaurant,” Mohr said. “With the addition of our organic rooftop food meadow and use of off-site private farms, we’re going more green, organic, local, and sustainable in our food, baked goods, beverages and everything else than before when we reopen as West Town Bakery & Diner.”
West Town Bakery & Diner has met the rigorous standards of the Green Restaurant Association by earning over 179 GreenPoints™ (175 points are needed to attain 3-Star certification) across six environmental categories — food, water, waste, energy, chemicals, and disposables. Additionally, West Town Bakery & Diner has eliminated StyroFoam, and has implemented a full-scale recycling program.
West Town Bakery & Diner has taken 61 environmental steps to make the restaurant’s operations more sustainable, including:
* Recycling plastic, glass, aluminum, paper, and cardboard
* Composting pre- and post-consumer waste
* Purchasing vegan, vegetarian, local, and organic food products
* Using Energy Star equipment (including refrigerator and dishwasher)
* Using pre-rinse spray valves to conserve water
* Providing recycled or biobased disposables
* Offering less-toxic paints, coatings, and hand soap

The sit-down diner portion of West Town Bakery & Diner will serve brunch from 7am until 3pm daily. Pastry and coffee counter service at West Town Bakery & Diner will be open from 7am until 9pm Sunday thru Thursday and 7am until midnight on Friday and Saturday.
The sit-down brunch portion of the menu will be overhauled, but certain dishes will remain on the menu with some modifications. Pastry, breads, coffee, cupcakes, donuts, and other baked goods along with specialty and stock cakes will remain at the forefront of West Town Bakery & Diner – but will be tweaked from previous recipes.
