CHICAGO’S HOTTEST NEW ROOFTOP BAR, RAISED, TO OFFER SUNDAY BRUNCH
Chicago will soon have a new mid-day nosh meeting place as Raised, An Urban Rooftop Bar, the city’s newest rooftop destination, will offer delicious, unique brunch selections on Sundays beginning June 5. Located on the third floor at 1 West Wacker with a gorgeous panoramic view of the downtown skyline and the Chicago River, Raised is sure to set the standard for cuisine and ambiance with its chic, urban indoor/outdoor décor. Spearheaded by General Manager Lenny Skorcz, the hotspot dining destination is raising the bar of service with a distinctive brunch menu curated by Chef Daniel Perez, complemented by innovative brunch beverage “tool box” offerings from William Nykaza. The new Sunday menu is sure to enhance the city’s booming rooftop terrace scene, creating a well-rounded experience and putting a new spin on mid-day culinary offerings for brunch foodies.
The delicious brunch fare fuses favorites from the Raised evening menu with delectable breakfast offerings like Bagel Chips and Lox with capers and hardboiled egg, and bold Chorizo Hash featuring red chile salsa and cotija cheese with poached egg. Those seeking a more traditional breakfast option may be drawn to fresh Seasonal Market Fruit with Greek yogurt and lavender honey, a delicate Muffin Basket with local honey and lemon ricotta, or the decadent Frassant, featuring croissant dough with cinnamon and sugar, chocolate sauce and berry jam. With offerings from the gourmet aged cheddar Egg Scramble, to Beef Tenderloin Sliders with truffle cheese, to Oysters on the Half Shell with champagne mignonette, savory cuisine does not take a backseat to breakfast at Raised. Diners looking to enjoy the evening menu can opt for popular dishes such as rich Truffle Frites with mushroom truffle aioli and succulent Chicago Lobster Rolls accented by citrus and tarragon.
Raised brunch is not complete without a perfect mid-day beverage, and William Nykaza’s unique “tool box” beverage offerings serve up to four people with an extensive array of delicious cocktail staples for an extraordinary DIY Bloody Mary or Mimosa. The Bloody Mary Tool Box includes Spanish chorizo, shrimp, candied bacon, aged cheddar, giardiniera, olives, celery and vodka for a hearty morning sip. Guests looking for the sweeter side of the cocktail menu will love the Mimosa Tool Box, featuring sparkling wine, orange, pineapple, cantaloupe and peach juice, and a fresh fruit garnish. Sweet selections such as the Raised signature 32° Peanut Butter & Jelly Push Pop, Burnt Caramel Ice Cream Sandwich or Passion Fruit Torte complete an all-around delicious and decadent brunch experience.

Following much anticipation and careful planning by a creative and culinary team, Raised opened to critical acclaim in May 2016. Under the direction of Executive Chef Daniel Perez, the regular menu at Raised features American bar food with a twist, highlighting sharable plates – ideal for mixing and mingling while soaking up the summer. Chef Perez focuses on all things local, sourcing his menu ingredients within 200 miles of Raised. The beverage program at Raised is curated by William Nykaza and features an array of wines on tap, an extensive offering of local craft beers on draft and by the bottle, and specialty cocktails served by the glass or in a shareable decanter. The creative libations with seasonal, fresh ingredients encourage guests to sample and share.
Raised was designed by The Gettys Group, fusing an industrial aesthetic with eclectic style and raw finishes. A glass wall lends to a stunning view of the skyline and Chicago River, while the outdoor area features fresh flowers, fire pits, cabanas, couches and an outdoor bar with a decidedly urban feel.
